01 - In a small saucepan over medium heat, whisk together almond milk, heavy cream, cocoa powder, and chopped chocolate.
02 - Stir continuously until the chocolate is melted and mixture is smooth and steaming, about 3-4 minutes. Do not boil.
03 - Add erythritol, vanilla extract, and a pinch of sea salt. Whisk until sweetener is fully dissolved and hot chocolate is creamy.
04 - Taste and adjust sweetness if needed.
05 - Pour into mugs. Top with sugar-free whipped cream and shaved chocolate, if desired. Serve immediately.
