01 - In a medium mixing bowl or mason jar, add rolled oats, milk, cooled brewed coffee, brown sugar, Greek yogurt if using, chia seeds if using, vanilla extract, and a pinch of salt. Stir thoroughly until all ingredients are well incorporated.
02 - Cover the bowl or jar securely and place in the refrigerator for at least 8 hours or overnight to allow the oats to absorb the liquid and flavors.
03 - In the morning, stir the oat mixture well. For a creamier texture, add an extra splash of milk if desired.
04 - Divide the oats into two bowls or jars. Top each serving with sliced banana, toasted nuts, and additional brown sugar or maple syrup as desired.
05 - Enjoy immediately while cold, or cover and refrigerate until ready to eat.
